6/13 Preserving Fruits and Vegetables: Learn the basics and benefits of home preserving and how to start eating cheaper, fresher, healthier, and more locally. We will discuss in detail proper canning techniques, including what you can and can’t process in a water bath canner, blanching and freezing techniques, and drying herbs, fruits, and vegetables.

6/27 Outdoor Herbals: Learn the basics and benefits of home preserving and how to start eating cheaper, fresher, healthier, and more locally. We will discuss in detail proper canning techniques, including what you can and can’t process in a water bath canner, blanching and freezing techniques, and drying herbs, fruits, and vegetables.

7/18 Balms, Butters, Salves: Learn to make a variety of body butters, lip balms, and herbal salves for gifts or a treat for yourself. Take home a jar each of lip balm and herbal salve that we’ll make in class. All supplies are included in the class fee.

7/25 Soap Making: Take home a sample and learn the basics of making bar soap, liquid soap and two forms of laundry soap. We will discuss the chemistry of saponification, properties of different base oils and local sources, and fragrance oils and other additives, while we make a batch of soap.

8/1 Beyond Sauerkraut: Explore the world of fermentation and learn how to make fermented pickles, salsa, sriracha, fermented non-alcoholic beverages, and even corned beef. Start your own jar of vegetables to take home and ferment.

8/8 Winter Gardening: Learn to plan out a small to medium sized family garden, vegetables that do well over winter in our climate, and how to maximize production from a small space. Now is the time to start planting your winter garden to have produce all winter long and into spring. Also learn about saving seeds and sources for free vegetable and flower seeds.

8/10 Edible Landscaping and Foraging: Don’t just pull those weeds, eat them! Find out which native weeds are edible and how to prepare them, you’ll be surprised how much food you’ve been throwing in the yard waste. Learn about common wild foraging plants berries, flowers, greens, roots, and common mushrooms and their habitats. Class is held offsite; location and directions will be given after registration.

8/15 Seed Saving: Learn a variety of techniques for saving heirloom vegetable seeds for planting, including ideal harvest times, collection techniques, preparation/drying, and proper storage.

Urban Homesteading: Food and Drink

5/2 Cheese Making: Learn to make a fresh hard cheese and ricotta from fresh milk, including the steps from culturing milk to pressing the finished cheese. We will also go over how to make yogurt and Kefir.

5/9 Sourdough Bread: Learn how to catch, care for and use a wild sourdough culture. We will review regular bread baking techniques for those who want to start simple. Learn to make a batch of sourdough bread including proofing, the complex biology of a vital sourdough culture, and tips and tricks to get that great artisanal-style bread in your own kitchen. Take home your own small round loaf and a sourdough culture.

5/16 Fermenting Kimchi and Kombucha: Learn sauerkraut basics as we turn a head (or several) of napa cabbage and other goodies into kimchi, and take home a pint to ferment and enjoy. A special modified technique lets you ferment directly in the jar. We will also make a batch of kombucha and there will be kombucha SCOBY to take home.

6/20 Making Jam and Canning Basics: Put summer in a jar by making your own fruit jam! We’ll make and can a batch of jam in class from fresh local fruit. Homemade jam can contain less sugar and more flavor than you find in commercial jams- and the potential varieties are endless. Each participants gets to take a jar home!
