Urban Homesteading: Picnic Series

Ages 18+. Be the star of the show with your amazing homemade sausages on sourdough buns with fresh sauerkraut and condiments, all washed down with home-brewed kombucha. Keep the bugs away with essential oil insect repellent.  Save 10% when you register for the complete series!

Sourdough Sausage Buns:  Ages 18+. Starting with a sourdough culture, you’ll make your own buns and learn about sourdough bread techniques, including how to catch your own wild sourdough culture. You can also take home an established sourdough starter to get baking at home right away.

Homemade Condiments: Ages 18+. Make your next picnic amazing with your own homemade condiments. Learn how to make mayonnaise, mustard, relish and ketchup, and how to tailor each recipe to make your own signature version.

Sauerkraut & Kombucha: Ages 50+. Learn sauerkraut basics as we turn a head (or several) of cabbage and some salt into sauerkraut. Take home a pint to ferment and enjoy! You will also learn how to make kimchi, kombucha, vinegar and gherkin pickles. There will be kombucha SCOBY to take home for anyone who wants it!

Sausage Making: Ages 18+. If you love sausages but hate what goes into the ones from the grocery store, you can learn how to make your own from whole ingredients. Develop your own spice mix so your sausage is as mild or spicy as you like. We’ll make a batch in class and eat them with some homemade mustard from our second class.

Herbal Insect Repellents & SPF:  Ages 18+. No picnic is complete without bugs. Learn how to make essential oil insect repellent creams and sprays, healing salves, and learn about the SPF potential of various herbal combinations. Only scientifically tested, proven safe and effective combinations are used. Take home a share of what we make in class. This NEW class is offered exclusively at Willamalane Adult Activity Center!

Urban Homesteading: Treat Yourself Series

Candied ginger for baking or a spicy treat, flavored salts to pep up your savory dishes, all-natural lip balms and skin creams, and hand-crafted soaps in your favorite scents are a fun and cheap way to add a little luxury into your life—and make fabulous gifts, too. Save 10% when you register for the complete series!

Ginger Treats: Ages 50+. Ginger can be used for a number of sweet or savory treats. Come cook up a batch of candied ginger, ginger syrup, ginger sugar, and pickled ginger for sushi. These all make great gifts and you can take home a share of what we make.

Flavored Sugars & Salts:  Canceled. Ages 50+. Learn three different techniques to make herbed, garlic, and red wine salt, and flavored sugars for a special finishing touch on your cooking and baking. Take home a portion of what we make in class.

Balms, Butters, Salves:  Class date changed to Friday, 7/20 from 9-11 a.m. Ages 50+. Learn to make a variety of body butters, lip balms, and herbal salves for gifts or a treat for yourself. Take home a jar each of lip balm and herbal salve that we’ll make in class. All supplies are included in the class fee. Register in Advance.

Soap Making: Ages 50+. Learn the basics of making bar soap from scratch. We will discuss the chemistry of saponification, properties of different base oils and local sources, and fragrance oils and other additives while we make a batch of soap. You will also learn how to make liquid soap and two forms of laundry soap. Take home a share of the soap we produce. All supplies are included in the registration fee. Register in Advance.

Urban Homesteading: Permaculture Garden Series

Learn how to identify and attract beneficial insects to your garden for natural pest control, plant low maintenance perennial vegetables, edible ornamentals, culinary and medicinal herbs, and winter-hardy vegetables for a durable, self-sustaining, permaculture landscape garden to complement or replace your annual garden. Save 10% when you register for the complete series!

Beneficial Insects: Ages 18+. There is a whole host of insects out there to help your garden grow and produce. Learn about predatory flies, beetles, assassin bugs, and many other predators and pollinators and how to attract them and get them working for you. You’ll be surprised at how many there really are.

Edible Landscaping & Foraging: Ages 18+. Don’t just pull those weeds, eat them! Find out what native weeds are edible and how to prepare them. You?ll be surprised at how much food you’ve been pulling up and throwing in the yard waste. Learn about common wild foraging plants berries, flowers, greens, roots, and common mushrooms and their habitats. Class is held offsite. Location and Directions will be given after registration.

Herb Gardens: Ages 18+. Almost everyone has room for a small herb garden. Learn which herbs grow well in pots, how to keep your herbs happy and productive, and how to store them dried or frozen. We will also discuss many non-culinary uses for herbs.

Winter Gardening: Ages 18+. Now is the time to start planting your winter garden to have produce all winter long and into spring. Learn to plan out a small to medium sized family garden. Learn which vegetables do well over winter in our climate, and how to maximize production from a small space. Also learn about saving seed and sources for free vegetable and flower seeds.
