Urban Homesteading: Fermentation Series

Ages 18+.

Artisanal Cheese Making: Using traditional craftsmanship techniques we will make a fresh hard cheese and ricotta, and learn about different hard and soft cheese cultures. The entire cheese making process from cultured milk to formed cheese ready for the press will be covered, plus how to create yogurt and kiefer. All supplies provided.

Savory Sourdough: Learn how to catch, care for, and use a wild sourdough culture. We will also go over regular bread baking techniques for those who want to start simple. Over the course of this class, we will make a batch of sourdough bread while we learn about proofing, the complex biology of a vital sourdough culture, and tips and tricks to get that great artisanal style bread in your own kitchen. Take home you own small round loaf and a sourdough culture.

Sauerkraut and Kombucha: Learn sauerkraut basics as we turn a head (or several) of cabbage and some salt into sauerkraut and take home a pint to ferment and enjoy. You will also learn how to make kimchi, kombucha, vinegar, and gurken pickles. There will be kombucha SCOBY to take home for anyone who wants it.

Fermentation Beyond Sauerkraut: Ready to explore the world of fermentation? Learn how to make your own fermented pickles, salsa, hot sauce, a variety of fermented non-alcoholic beverages, and even corned beef. Take home a pint of giardiniera and some habanero hot sauce to finish fermenting at home. Bring a wide mouthed pint jar or $1 to purchase from instructor.

Urban Homesteading: Garden Series

Ages 18+.

Feeding the Family from the Backyard: Learn about the many possibilities for producing food right out of your backyard, from gardening and raising fruit trees, to backyard chickens, beekeeping, and landscaping with edible ornamentals and perennial vegetables. Kevin Prier of Suburban Homecraft will discuss various processes, how to decide where to start and how to get the best return on your efforts. If you are interested in any of the homesteading classes, we encourage you to join us for this discussion. Please register in advance.

Pruning and Grafting: Learn how to prune fruit trees and grapes for form and productivity, including thinning, recognizing fruiting spurs, and directing growth patterns. Learn how to graft new varieties onto existing trees or rootstock in time to take advantage of the free fruit grafting material from Eugene’s annual Propagation Fair in March. Class located offsite.

Backyard Poultry: Nothing beats an egg fresh from your backyard. Learn how to raise egg-laying chickens and ducks – breeds, feed, housing and safeguards against predators and disease. Get a small coop or chicken tractor ready for spring hatching season.

Spring Garden Preparation: Get your garden ready for an early planting of peas and start tomato seeds inside so they are ready when the weather warms up. Gardening basics and more advanced techniques will include starts vs. direct sowing, co-planting, attracting beneficial insects, composting, soil amendments and maximizing space. Free seeds included with class.

Intro to Beekeeping:  A productive bee hive can produce up to five galls of honey a year. Learn beekeeping basics, such as equipment, supplies, sources, and techniques, before you commit to building your own hives. Learn about current issues with beekeeping, local laws, common diseases and pests, and their treatment options. Local package bees arrive in early April.

Urban Homesteading: Picnic Series

Ages 18+.

Sausage Making: If you love sausages but hate what goes into the ones from the grocery store, you can learn how to make your own from whole ingredients. Develop your own spice mix so your sausage is as mild or spicy as you like, and eat them with some homemade mustard.

Condiments: Make your next picnic amazing with your own homemade condiments. Learn how to make mayonnaise, mustard, relish, and ketchup, and how to tailor each recipe to make your own signature version. Bring three small containers to take home a share of what is made in class.

Chutney and More: Learn how to make three varieties of chutney, sweet, mild, and spicy. Learn the basics for modifying existing recipes or creating your own personal brand, perfect for your holiday spread. Take home a sample of to savor or share, please bring three small containers.

Urban Homesteading: Treat Yourself Series

Ages 18+.

Balms, Butters and Salves: Learn to make a variety of skin creams, lip balms, and herbal salves for gifts or a treat for yourself. Take home some lip balm and herbal salve to keep or give as a gift. All supplies are included in the class fee. Register in advance.

Soap Making: Learn the basics of making bar soap from scratch. Discussion includes the chemistry of saponification, properties of different base oils and local sources, and fragrance oils and other additives while we make a batch of soap. Also learn how to make liquid soap and two forms of laundry soap and take home a share of the soap we produce. All supplies are included in the registration fee. Register in advance.

Aromatherapy and Essential Oils: NEW! Essential oils can have strong therapeutic qualities. Learn how to use them effectively and safely in spray mists, massage oil, and even mosquito repellant creams or sprays. Register in advance.

Basic Circuit Building

Age 14+. Learn how to read a diagram to build a circuit. This class explains the ABCs behind simple electrical circuits. By the end of the class, each student will have built a working circuit. Doug Weiss has taught electronics for the last 20 years and is offering classes for basic to intermediate skill levels. Advanced Circuit Building

Ages 14+. Use a solderless breadboard to build a more complicated circuit. When building a circuit with several components, the wireless breadboard provides and advantage by allowing the user to make quick multiple connections that are not permanent. Advanced Soldering Skills

In this class, the student will be given a schematic and they will use their soldering skills to build a working circuit without the use of a hobby kit. Arduino for the Hobbyist: Level 1

Ages 14+. You don’t have to be a master programmer to use this amazing microcontroller. In this class you will learn to download the necessary software to program the Arduino, open and modify an application from the device library and connect some simple “real world” hardware to the controller. Lavender Lunch: Cooking Demonstration

Ages 18+. Summertime is lavender season. Students will learn techniques and instruction on a variety of ways to use your lavender cuttings in cooking, in addition to enjoying a full lunch. Menu includes artichoke-dipped halibut, lavender roasted carrots, and rosemary and lavender cornbread, along with lavender honey posset for dessert. Intermediate Dog Training

Ages 18+. You and your dog learn the tools necessary to be good community citizens, including basic dog obedience and community manners. Your dog will learn watch, sit, down, come, stay, wait, greet and many other tools to be a great community citizen. Canine Good Citizen testing is available. If you have owned your dog for a while and bonded with them and your dog is at least 6 months old, this dog obedience class is for you.  No class 1/16, 2/6. Advanced Dog Training

Ages 18+. This dog obedience class is for dog owners who want to push themselves and their dogs to achieve higher levels of Canine Good Citizen understanding and abilities.  No registration attend with punch pass only.  Prerequisite: Intermediate Dog Training or instructor approval. No class 1/16, 2/6.

Show Dog Training: Conformation

Conformation classes will teach you how to train and present (handle) your dog in the show ring. stacking, baiting, gaiting, and ring procedure will be stressed. ODTI Driver’s Education

This Oregon Department of Transportation-approved program consists of 33 hours of classroom instruction, six hours of behind-the-wheel instruction, six hours of observation in the vehicle and two hours of parent education.
